Honey sweetness with tropical fruit and a bright citrus edge.

Yellow Caturra ripens to gold rather than red, which makes picking it a matter of judgement rather than colour-spotting — one reason it stays a small-lot coffee everywhere it is grown. It is a natural dwarf mutation, compact enough to thrive on the terraced slopes above our farms, and it ripens faster than its red cousin.

Grown on the south slope of Mauna Loa in deep volcanic soil across our two farms — Pahala at 1,600 feet and Naalehu at 2,100 feet. The cooler air in the higher Naalehu blocks is what keeps the citrus in this coffee; grown lower and warmer, a Caturra tends to lose its edge. Sunny mornings, misted afternoons, cool nights.

The Miranda family planted our first roots in Pahala in 2006, after arriving from El Salvador. Hand-picked, milled, roasted and packed here in Kaʻū.

Medium or dark

Medium is the one to order if you have not had this coffee before — it is the roast that lets the honey and the tropical fruit through, and it is the most distinctive cup on our farms. Dark converts that brightness into spice and deepens the cocoa, for a fuller and more familiar cup.

  • 16 oz — about 32 cups, at a better price per cup.

How to brew it

18 g to 300 ml. This is the coffee we would put in a pour-over ahead of anything else we grow — a V60 or Chemex will pull the citrus and the fruit apart so you can taste both. Choose Whole Bean to grind at home, or Ground for a medium grind.

A small lot

We harvest less Yellow Caturra than any of our varietals except Peaberry. When a harvest sells through, it is gone until the next one.
