Concentrated and clean — caramel sweetness, a fuller body, and a brighter finish than any flat bean on our farms.
Most coffee cherries hold two seeds that grow flat against each other. In roughly 5 to 10% of a harvest, only one seed develops — and with the whole cherry to itself, it grows round instead of flat. That is a peaberry.
You cannot plant it. It has to be separated out during milling, one screen at a time. The round bean is also denser, so it roasts more evenly than a flat bean. Ours are sorted from our harvest at Pahala (1,600 ft) and Nāʻālehu (2,100 ft) — sorting across two elevations is the only reason we have enough of it to sell at all.

Medium or dark
Medium is what peaberry is for — the whole point of the bean is concentration and clarity, and a medium roast keeps both. Dark makes a very good heavy cup, but you would be paying a premium for nuance a dark roast will flatten. We would order medium.
How to brew it, and shipping
Whole bean, 8 oz — about 16 cups. 18 g to 300 ml. Because the beans are denser and roast more evenly, this is the most forgiving coffee we sell: it is hard to make a bad cup of it. Pour-over shows the most. When the season's sorting is gone, it is gone until next harvest. Roasted the day we pack it, out of Hawaiʻi within 1–2 business days.
