Unroasted 100% Kaʻū coffee, for roasters who would rather do it themselves.
This is our green coffee — the same trees, the same hand-picking, the same volcanic soil on the south slope of Mauna Loa. Milled, dried, sorted, and then left alone. What happens next is up to you.
We grow across two farms at different elevations: Pahala at 1,600 feet and Naalehu at 2,100 feet. If you roast seriously, that spread is worth knowing about — the higher Naalehu blocks give a denser bean that takes heat differently from the lower Pahala lots. Tell us what you are after and we will tell you what we have.
Two varietals to choose from:
- Typica — the original arabica, and the variety first planted in Hawaiʻi in the 1820s. Expect clarity and clean sweetness: brown sugar, almond, soft citrus. Refined, low-to-medium acidity. Rewards a careful, lighter roast.
- Red Catuai — hardier and more forgiving, with a rounder cup: cocoa, toasted almond, brown sugar, a little cherry. Medium body, gentle acidity. The safer of the two if you are dialling in a new profile.

Roasting it
Kaʻū coffee carries its sweetness well and does not need to be pushed. Most of what we sell from our own roaster sits in the medium range, where the sugars have developed but the fruit and the acidity are still in the cup. Take it darker and the brightness turns to spice — pleasant, but a different coffee.
